The Broadmoor and The Golden Bee

Northwest Pearls: The Broadmoor While in Colorado Springs for A's wedding, we went to The Broadmoor hotel a couple of separate times to get delicious pastries and to get food. The Broadmoor is a magnificent hotel in southern Colorado Springs. It's gorgeous, and some of the interior design rivals manors I've seen in Europe.

I went by myself and got a delicious fruit tart from a cafe. Later that day I returned with the other two bridesmaids and they got pastries. One got the Rosewater Macaron and I tried a bite. It was amazing.

We walked around the grounds with our pastries and took in the scenic views. There's a path that goes around the lake and a bridge that divides the lake. You can see the mountains in the background from the lake and all around the hotel are amazing gardens and fountains.

And the next day, after A's wedding, another one of the bridesmaids and I stopped at The Golden Bee for food.

We sat at the bar and she got a Scotch Sour (instead of a Whiskey Sour) and Scotch Eggs (I think but I'm not sure that's what her food was called.) I got what I believe was called the Our Beer Cheese Soup. It was amazing and I had a sip of her drink which was pretty darn good too. We went while the piano player was there and there was a sing along book for people to sing along with. It was so much fun, I've never been to a bar or a restaurant quite like that.

The Broadmoor is a beautiful place, their staff is so nice, and their food is delicious.

First Try at French Macarons

I decided to try my hand at making French Macarons. They have a reputation of being difficult, but I managed to pull them off pretty well, especially for a first try. French Macaron Close Up

Using this recipe, I followed it with supplemental instructions from this YouTube video. To make vanilla macarons,  I added 1 teaspoon of vanilla extract to the filling as it was being mixed. And to spread the filling, I used a knife, which is why it doesn't look as professional as it could have, though I like how they look. (Ignore the red glare on the macarons in the pictures, it's a result of the plate they're on.)

I had a lot of filling left over, partly because my sister got half of the macarons for helping me, and she liked them better without the filling, so she chose to just eat the cookie shell part. But even if I had filled those macarons, I think I still would have had filling left over.

Not everything in the instructions was entirely clear, but with the combination of the two sets of directions, I made it work and have been loving the macarons! I'm definitely making these again.
