Huckleberry Pie at Priest Lake

Northwest Pearls: Huckleberry PieI've always loved huckleberries. We've always had bushes of them growing in our yard or neighborhood so it blew my mind when my best friend thought that they were something "from Dr. Seuss." Then I had two other friends think that they were just a flavor. They didn't realize they were a real thing. That being said, I love huckleberry flavored things. Ice cream especially. We bought huckleberry ice cream at Priest Lake and it was amazing. And while at that store, we picked up a huckleberry pie for later. It was pretty good. And so pretty. I can't imagine how many huckleberries it took to make this though.

I'd for sure go get ice cream there again and probably the pie too!

Northwest Pearls: Caramel Apple Possibly my favorite treat is a Rocky Mountain Chocolate Factory caramel apple. Their Apple Pie Caramel Apple is amazing. I always get it whenever I go.

I've been craving one for a while, but it's out of my way to go and get one. I'd mentioned to one of my closest friends that I had been debating ordering one online. Two days later he suggested I check my mail after work. I had no idea what to expect, but I was excited to get home and see what it was.

It was my favorite flavor of caramel apple! He'd ordered it and surprised me with it.

It was a great after-work treat; I only wish I could have shared it with him.

Making Molten Chocolate Cakes

Northwest Pearls: Molten Chocolate Cake My mom found this recipe for molten chocolate cakes and we decided to try and make it!

The first attempt at the food was good, but the cakes cooked too long (they were in there as long as the instructions had said to leave them in) so they weren't very molten. The second attempt we changed the cooking time but didn't leave them in long enough, so when the cake was flipped over, all the molten chocolate fell out the top. The third attempt, they had the same problem as the second. And the fourth attempt, I just ate it out of the dish.

It was delicious. Maybe a little flour-y, but pretty good overall.

Apple Rose Treats

The other treat I made for the bake sale was Apple Roses. I found this recipe and decided to make them. It was a mistake.

The treats were amazing, but the amount of time I put into them was not worth it for a simple fundraiser. I wouldn't make these treats again unless it was for a pretty fancy dinner party. It took me about 3 hours and 45 minutes to make 16 treats.

I did learn some things though. If I make these again I will use our mandoline slicer, and I will have plenty of lemon juice on hand.

I needed more apple preserves than the original recipe called for, and more water and lemon juice to soak the lemons in. I also found that I should have simmered the apples in warm water right away and not tried just soaking them. Even when increasing the ingredients to make triple I still needed way more of the preserves and water. But the treats turned out wonderful and apparently had the mothers fighting over them.

The treats were a ton of work, but I like how they turned out, not too sweet, and very pretty.

Thanksgiving Treats

Northwest Pearls: Thanksgiving Bakery Treats For Thanksgiving dessert, our friend bought Chocolate Pecan Tarts and cookies from Phoebe's Pastry Cafe. Our friend brought about eight of the tarts to Thanksgiving dinner. All of which came in a big white pastry box with the bakery sticker on top. I think it's cute that the logo design has a "P" incorporated into the baker.

I love Chocolate Pecan Pie so I had a tart. It was amazing. I could have eaten a second one. I can't tell you how much I loved the tart, but I finished every last crumb on my plate.

We never got into the cookies, but they were decorated really well and looked yummy. I like how the leaves aren't a solid green, but have  three different colors.

I'm definitely adding Phoebe's Pastry Cafe to my list of places I need to try. I'd like to see how the rest of their food is!

Birthday Weekend in Downtown Portland

For my 21st birthday, my mom, aunt, and I went to downtown Portland for the weekend. We stayed at the Benson Hotel, which is beautifully restored. The marble and iron staircase at the Benson Hotel

We had a meal at the Ringside Steakhouse, where the pastry chef wished me a "Happy Birthday." It was really pretty.

We had high tea at The Heathman. The room we had tea in was amazing. And the pastry chef there also wished me a "Happy Birthday." This plate was also fantastic. I love having afternoon tea. It might be my favorite thing to do.

Also, while we were in Portland, got to do quite a bit of shopping. We went to Nordstrom and picked up a few things at their Anniversary Sale. My aunt bought me two jackets for my birthday, a beautiful brown leather jacket, and a pretty black rain jacket. When we went to Anthropologie, I found a necklace and earrings that I pinned to Pinterest a few weeks ago and my mom bought them for me.

We also went to Powell's Books. It was incredible how many books they have. For one of our dinner, we had some Indonesian food from Satay Indonesia, a food truck nearby.

There was much more we wanted to do in Portland but didn't have the time for. Maybe next time!
